Baked Chicken and Zucchini

My family of five(2 teenage sons and a 6 y o daughter) ate this up! It was absolutely delicous and easy to prepare. I used Italian seasoned bread crumbs which may have made up for the lack of flavor some complained about. What a great way of getting vegetables into my kids with no complaints!

Bacon for the Family or a Crowd

I too, use parchment paper rather than foil. This is the easiest way to cook bacon. I have teenage boys and this is the only way they and their friends want to have bacon now.

Salmon Spread I

I made this for a family Christmas celebration and it was a great hit! I did make 2 small changes which were already suggested by others... The salmon definitely does need to be doubled, & I added finely chopped scallion tops. I found that by whipping it on high, the flavors seemed to blend beautifully. Thank you for this recipe!
