If you think of “Prairie Home Companion,” Jell-O salad, and hot dish when you think of Minnesota cuisine, you’re way off the mark—at least in the Twin Cities. Minneapolis and St. Paul are part of a vibrant Midwest dining scene that’s second only to Chicago. Although the region was settled by Scandinavians drawn to the timber and flour mills, you’ll be hard-pressed to find Norwegian or Swedish restaurants these days now that Marcus Samuelsson’s Aquavit has closed. New immigrants, from Somalia, Laos, and Mexico have changed the local culinary landscape. Minneapolis is the younger, hipper sibling, with cutting-edge restaurants and architecture (check out the new Guthrie Theater overlooking the Mississippi). St. Paul, the state capitol, is the clean-cut traditionalist; famous Summit Avenue residents included F. Scott Fitzgerald and timber magnate Frederick Weyerhaeuser.

Chocolate Covered Cherry Cookies II

Insanely good! So glad I doubled the cookie recipe (kept the icing at original recipe size)!! Did add the extra egg, did half white / half brown sugar, added a tsp of Almond Extract, and added some cherry juice into the cookie batter (didn't measure, just poured it on it). For the icing, I used a full half cup of cherry juice. As for the cherry itself: I rolled the dough into a ball, flattened it and made an indent with my thumb. Dropped a bit of icing there, to hold the cherry in place - and baked. Then, I did put icing into a baggie and piped it onto the baked cookies. These are going to "WOW" the staff for the Teacher Appreciation Dinner this week!

Parmesan Chicken II

Sometimes I consider a recipe a starting point of which things can be added and enhanced. How is one person going to create something that my family will all like. Heck, I can't even always create something from scratch that my whole family will like and I know them. I liked this recipe and I added my customary things to it: Wheat flour, garlic powder and a smidge of cayenne pepper. I out the dry ingredients into a bag and the eggs into another bag. Also, I added a bit of salt and pepper to the eggs. I also put the whole thing into the oven and suspended the chicken onto a rack that was perched on top of a roasting pan. Plenty of air. The chicken was crispy and it lost some of the grease and was delicious and well recieved.

Sauteed Apples

These are DEVILISH! To make myself feel a bit less guilty, here's my changes: A bit less butter. 4 McIntosh Apples. A shot of vanilla. Skipped the water / cornstarch gig. 6 tbs brown sugar. And, oodles of Penzey's Apple Pie spice and nutmeg. Eight servings? That can't be right or I'm a bigger pig than I thought! Me & one other person took down all of them!
