About me:
I am a 31 year old wife and mother of 4 children. That probably tells you exactly why I cook and why I can never find enough new and innovative recipes. My grandmother was absolutely my greatest cooking influence. Nothing ever came out of a can or freezer in her kitchen. It came from the garden or it was made from scratch. She taught me to put my heart into cooking. Being an old fashioned southern cook and christian wife, her duties were her pleasures and she impressed on me that nothing was as challenging or as pleasing as caring for a husband and family. She cooked on a coal/wood stove until 1991, when my dad said "OK, its time for a change." we got her a gas stove and she was glad that it didn't get as hot as standing next to the old stove but she never liked the way it cooked. Simple Marinara Sauce

Nikki's Steak Saltimbocca

I have been making my version of this for several years. I use swiss, fresh spinach and shaved VA ham from the deli. I roll them up, sprinkle with McCormick's grill seasoning & then freeze till almost frozen and then slice thinly & pan fry the pinwheels till they are done and serve on top of prepared angle hair pasta and my most favorite side of roasted green beans.

Rich and Simple French Onion Soup

Such an easy and delicious soup!!! I loathe swiss cheese (smells like feet) so I used Provolone instead. Added a little more thyme, I love the flavor, and a bit more sherry. Also I didn't have any french bread so I used ciabatta bread instead. Absolutely fantasitc!!!!
