1 tablespoon milk
1 cup seasoned dry bread crumbs
1 tablespoon Italian seasoning
4 skinless, boneless chicken breast halves
1 cup shredded mozzarella cheese

DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In a small bowl, beat egg with milk. In a shallow plate or bowl, mix bread crumbs with Italian seasonings. Dip each piece of chicken into the egg/milk mixture, then into the bread crumb mixture to coat thoroughly.
Place coated chicken in a 9x13 inch baking dish. Bake in the preheated oven for about 30 minutes, depending on how thick the chicken breasts are (bake until chicken is done and juices run clear). In the last 3 to 4 minutes of baking, sprinkle the top of the chicken pieces with cheese. Remove from oven and serve!

What a wonderful weekday dinner option. Few ingredients - very little hassle. Moist, tender, and flavorful. A couple of simple sides and you're all set.

As written, kinda bland. I added some garlic powder, freshly-ground pepper, and a pinch of cayenne pepper to the flour mixture. This really needs a marinara sauce too. Not bad but needs a little tweaking.

This recipe is super simple and tastes great. I use itlian bread crumbs so there really isn't any need for the italian seasoning. Served with rotini noodles and spaghetti sauce with bread and a salad (throw in "garlic croutons" from this site), its a perfect meal.

This was an awesome oven-fried chicken dish. I had more chicken than the recipe called for so I added about a 1/3 cup potato flakes to the bread crumb coating mix. I also oiled the pan to keep it from sticking. The chicken was very moist, and the coating was crispy and nicely browned.
