This recipe is one of the simplest recipes I've ever run across. But I am giving it four stars only because I made a few changes. I scaled down the recipe to only 1 serving for me alone. Instead of using chicken thighs I chopped a breast in bite sized cubes and chopped up enough potatoes to go with. I didn't have any dried herbs on hand separately as I hardly cook with them but I had pizza seasoning which has a mixture of oregano, rosemary, thyme, basil, sage and marjoram. I used the recommended amount of garlic salt and I used a bit less olive oil because of some of the reviews I read. After coating the chicken and potato in the oils and seasonings I sprinkled about a tablespoon of breadcrumbs over the top and let it bake. Boy did it come out smelling wonderful! The chicken and potatoes were so soft and delicious. I had also pre-marinated my chicken as well so the flavour really got baked into the meat. I would make this recipe again in a heartbeat.

Delicious. It took about 5 mins to throw together and tasted fabulous. I pretty much tripled the rosemary and oregano and used minced garlic rather than powder. I also only used 1/4 c EVOO and that was probably more than enough...the chicken put off enough oil to baste. I placed under the broiler for about 5 minutes and then YUM!!! The only thing I would do different is add some dried minced onion or top with sliced onions or even bake it with whole onions. Thanks for an awesome recipe. The house smelled fantastic while it was cooking.

This chicken was WONDERFUL! I cooked it a bit longer b/c I like my skin crispy. Also, I marinated the chicken in the herbs and 1/2 the oil (never added the other 1/2) for a few hours. I started with the chicken and potatoes in the same dish, but ended up taking the chicken out b/c the potatoes weren't browning. I do recommend starting them together so that the chicken flavor gets onto the potatoes (remove about 1/2 way through cooking).

This is one of my favorite recipes! The chicken got nice and crispy and had great flavor. My kitchen smelled great while this was baking. I've made it before and I'm making it again tonight for dinner. YUM!!

I'm sad to say my fresh Rosemary started to go south before I had a chance to use it. I was only able to salvage about 1 T worth and had to use some dried stuff too, fresh is definitely the way to go with this dish. It sure smelled wonderful while baking.

This is the perfect meal for those nights that you just don't feel like cooking. It took 10 minutes to throw it all together and put it in the oven so I could relax instead of stand over a hot stove. I realized in the beginning that I accidently had bought skinless chicken thighs, so I didn't end up with crispy chicken, but it was still delicious anyway. Definitely use the fresh rosemary, it makes all the difference.

This was good! I did use a little Goya Sazon just to give it a little more flavoring... The aroma was incredible..I made it with white rice and beans w/ sauce.... MMMmmmmm...I topped it with an avocado...awsome!

I had a lone sweet potato that I added along with the other 2 russets that were in the pantry. The sweet potato was fabulous as it added a new dimension to the flavor. Other than that and using extra fresh garlic, I didn't change anything. The recipe was wonderful.
