Picnic Potato Chip Chicken

"This crunchy chicken could always be found in the picnic basket Mom took to potlucks. For a little variety, try coating with barbecue-flavored potato chips."

INGREDIENTS

  • 3 cups crushed ridged potato chips (any flavor)
  • 3/4 teaspoon garlic powder
  • 1 (3 1/2) pound broiler-fryer chicken, cut up
  • 1/2 cup butter or margarine, melted

DIRECTIONS

  1. In a shallow bowl, combine potato chips and garlic powder. Dip chicken pieces in butter, then roll in potato chip mixture. Place in a greased 15-in.x 10-in. x 1-in. baking pan. Sprinkle with any remaining butter and coating. Bake, uncovered, at 350 degrees F for 1 hour or until juices run clear.

This was really good! I used olive oil instead of butter and baked the chicken for 70 minutes (the pieces I had were really big.) Yum!!

Really good and the garlic taste came through nicely. Not the healthiest dish but the chips gave it a nice crunch. I used a combination of boneless skinless chicken thighs and drumsticks with the skin on and the thighs got gobbled up first. A good way of getting the kids to eat their chicken.
