Chicken Berry Salad

"This recipe uses three kinds of fresh berries and your choice of mixed salad greens, all tossed together with grilled chicken and a special honey mustard dressing. This is my favorite summer salad - I make it for company all the time! And it is very pretty!"

INGREDIENTS

  • 1 (.75 ounce) packet honey mustard salad dressing mix
  • 1/4 cup cider vinegar
  • 1/2 cup vegetable oil
  • 2 tablespoons orange juice
  • 1 pound skinless, boneless chicken breast halves
  • 8 cups mixed salad greens
  • 1 cup sliced fresh strawberries
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 8 ounces sugar snap peas
  • 1/2 cup toasted pecans

DIRECTIONS

  1. In a medium bowl, prepare the dressing according to package directions, using vinegar and oil, and substituting orange juice for the water; set aside.
  2. Preheat the grill for high heat.
  3. Lightly oil the grill grate. Grill the chicken 6 to 8 minutes on each side, or until juices run clear. Remove from heat, cool, and slice into strips.
  4. In a large bowl, toss together the chicken, salad greens, strawberries, blueberries, raspberries, peas, and pecans. Pour in the prepared dressing, and toss to coat.

Great recipe! I substituted bottled Honey Mustard dressing since I was unable to find the mix, but it just made the recipe quicker and easier to make! The raspberries did not hold up well in mixing and serving the salad (tended to break apart and "disappear"), so next time I'll just use a few extra blueberries and strawberries. I used pre-packaged roasted chicken cuts, and so the recipe was speedy to prepare!

I really did like this recipe. I could not find the mix, so I used the bottled dressing. This was a good salad. I almost didn't want to bring it to the picnic I made it for because I had started eating it & didn't want to share it! I'm making it again next weekend for another function. I'm sure it will be a hit.
